DAIRY COMPANY REPORTS. WORKING OF LAST SEASON. Tho annual report of the Taratahi Dairy Co., covering the season ended July SI, says:—The amount of milk received during the season was .1,193,5811b., being 477,1411b. mure than the. previous year. Tho butter-fat amounted to 103,730.911b., tho milk showing a percentage of 3.90, and producing 121,01111). ox cheese, equal to 138} tons, an increase on last season of "li tons. Each pound of butter-fat made 2.571b. of cheese, tho milk averaging 9.9-llb. to each lib. of.cheese. During the season advances were made to milk suppliers at Is. per lb. of butter-fat, amounting to XSIB6 Ids. 7(1., leaving for distribution. ' .02302 9s. 2d., equal to 15 3-8 or 15.375 d. per. lb. of butter-fat over tho whole season. The directors also mado provision lor tho payment of 6 per cent, on the paid up capital. According to tho annual report of tho Belvedere Co., the amount of milk received was 5,565,1871b., a decrease on tho past year of 127,7031b, ■ Tho butter-fat average 3.SS per cent, and amounted to 216,105.211b., being G353.31b. less than last season. The cheese made was 578,0151b. (about 258 tons), an increase on last sei.son of over 3i tons. ' Each pound of but-ter-fat averaged 2.G71b. of cheese, and it took 9.621b. of milk to make one pound of cheese. The whole of the output wis graded first-grade, and prices as high as iGs. 7d. .were obtained in the London market—easily a.' record for the company. : During tiie season advances up to Is. per lb. of butter-fat were made to suppliers for milk, amounting■' to .£10,805 ss. Id., leaving for distribution .£3320 7s. 2d., making for the whole season 15 11-lGths or 15.6875 d. i)er lb. of butter-fat. The Mangaramarama Cheese Company's annual report shows that during the season 1,565,9651b. of milk were received, containing 59,9.'i31b. of buitor-.fat, and from which 163,0391b. of cheese were manufactured, averaging 9.61b. milk to ' lib. of cheese, and 2.721b. of cheese to lib. o f but-ter-fat. Tlte tests ranged from 8.2 f o 5.9, the average for tho season being 3.82. After writing off .£33 ss. for depreciationthere remains a balance of .£6OO 13s. ill., which, the.directors recommend lie disposed of in paying a bonus of 2 1 8d. per lb. on butter-fat supplied by shareholders, 5 per cent, on paid-up capital, a bonus of ,£lO to the manager, and carrying the balance forward.

In 'the Warra Dairy Company's annual ivport (■I May 31 the directors state that the milk received at Warea ' totalled 4.129,0911b., with 166,50-llb. butter-fat, giving an average test of 3.76. At'Newall the figures were: Milk 2,755,25G1b., but-tor-fat 104,9851b., and average test 3.77. .This made a total of 7,214,3471b. of milk received, 271,3901b. butter, and an average test of 3.7G2. As regards the buttermaking, 29,5801b. butter-fat made 34,1931b. butter. The over-run was 15.5 per cent.

In cheese-making, the milk received at Newall totalled 2,507,8791b., hutter-fat 94,5G01b., cheese-made (factory weight) 255,7051b.; pounds milk to pounds cheese, ,9.91b.; pounds cheese to pounds butter-fat, 2.6961b. At Warea the milk received totalled 3,896,7041b.; butter-fat, 146,9501b.; cheese made (factory weight), 3"96,2191b., pounds milk to pound cheese, 9.831b.; pounds cheesa to pound butter-fat, 2.71b. The total cheese .made was 651,9241b. The amount remaining to' the credit of profit and loss account on closing the books was .-£2325 18s. 5d., and out of this the direc tors appropriated .£374 14s. 2d. to provide for the depreciation on properties and plant, leaving a balance of ,£1951 4s. 3d.— out of which they recommended a payment of interest at tho rate of £i per cent, per annum on fully paid shares, which' would absorb ,£B9 7s. 3d., and a further payment of lfd. per lb. on all butter-fat supplied, which would amount to ,£1837 10s., and leave ;£24 7s. to be carried forward to next year, or otherwise dealt with. The average payment per lb. of butter-fat' for the .year, with the further payment would bo 13.2 approximately, i The report of the Kaitawa Co-operative Cheese Company shows that during the season 1,934.5891b. of milk were received, yielding 72,5G2.671b. of butter-fat, out of which 194,6331b. (86 tons r l7cwt.) of cheese were manufactured, which works out at an average of 9.931b. of milk to lib. of cheese and 2.681b. of cheese to lib. cf butter-fat, the average test being 3.75 per cent. The profit and loss account showed a profit of JIOSO 15s. 5d., out of which the directors recommend an additional payment of 3Jd. per lb. of butterfat, and a dividend of 6 per cent, on paid-up capital. The balance-sheet shows that tho receipts for the year totalled '.£5427 lis. lid., including: Cheese sales, ,:£5277 7s. sd. The expenditure amounted to .£4346 16s. Gd., including advances on milk, ,£3325 lGs. 3d. The value of the property and plant owned by the company is set down at ,£llO9 Os. Gd., the respective items being: —Plant, .£594 2s. 4(1.; land and buildings, .£604 18s. 2d.

The report of the ffurleyville Co-opera-tive Dairy Company states that the output, of cheese was sold at G 1-16(1. per lb. The price paid to the suppliers was Is. 0!d. per lb. of butter-fat. A supplementary payment of 1 l-sd. was made up to thd end of January. The profit and loss account showed a credit balance of .E792 3s. Id., of which tho directors recommend that' a dividend of 6 per cent, be paid on share capital, and that the balance bo paid out, of the supplies.
