TO-DAY'S DINNER.

WEDNESDAY. White Soup. Haricot of Mutton. Potatoes - Cauliflower. Canary Pudding. Lemon Sauce,

CANARY PUDDING. 'Three ounces \butter, 4oz. sugar, Goz. flour, 1 small teaspoonful baking powder, the grated rind of the lemon, S teaspoont'ul essence, of lemon, i eggs, \ gill of milk. Beat the butter and sugar to a cream. Add the eggs (well beaten), then tha milk and essence, and lastly the flour, baking powder and lemon -rind. Mix well, pour into a well-greased mould and steam H to i! hours. Serve with lemon sauce.

LEMON SAUCE. Three-quarters pint water. 1 dessertspoonful each of sugar and arrowroot, juice of J lemon, 1 teaspoonful essence of lemon, 2 eggs. Blend the arrowroot with a little water. Put the 'remainder on to boil. When boiling stir in the arrowroot. Add sugar and lemon juice and boil for a minute or two. Pour on to the beaten yolks, gradually stirring all the -time. Cook for 1 minute without boiling.

FOR TO-MOBROW. Stock. Cury Powder; Loin of Mutton, Celery. Apples.. Pastry.
