[Specially written for Tub Doiiimkh.) TCESDAY. Macaroni Soup. Hoasl Shoulder of Mutton. Onion. Sauce. Jinked Potatoes. Celery. Bate I'udding.
STEAMED MATE PUDDING. Three ounces butter, .'loz. sugar, fioz. (lour, one .small teaspoonful baking .powder, juice of haif u lemon, a little grated nutmeg, jib. dates, 2 eggs, 'half-gill milk. Jleat the butter and sugar to a cream; add the well-beaten eggs, then the milk gradually, then the flour and baking powder sifted, the dates chopped finely, the nut r liieg and lemon juice; mix well, and pour, into a well-greased mould; cover "with greased paper and strain 11 hours. Turn out and serve with date sauce.
DATE SAUCE. Three gills milk, loz. dates, one dessertspoonful cornflour, two tablespoonfuls golden syrup, lemon juice, l'ut the dates and milk on to .simmer gently, and .simmer ten minutes; strain; blend the cornHour and stir it in; cook three minutes; add golden syrup and lemon juice jusi before serving.
