AT PALMERSTON. I DISPLAY IN BUTTER & CHEESESOME' PLACE WINNERS. (By Telegraph—Special Reporter.) Palmcrston North, June 21. Tho bustlo incidental to the dairyman's gala week— tho. National Dairy Show — has commenced in earnest, and Palniprston is a crowded town. All tho hotels are fully booked up, and it is almost impossible to approach any group of men without overhearing snatches of conversation about butter-fat, yields, tests, or breeds. It is the dairyman's "Day Out." As to tho actual show building, this presents a very busy appearance, and to-night's work will leave things complete for to-morrow's opening ceremony by his Excellency tho Governor, who arrived this afternoon. Another distinguished visitor—tho Hon. James Brvce—who had been specially invited to be present, has advised the executive that lie will be unable to spare the necessary time. A Talk With the Judges. The judging ill the dairy produce class was completed this evening, but, contrary to the custom of previous years, the cards arc not yet available, although some details were obtainable from the judges. Tho New Zealand championship for butter, mjder the auspices of tile Dairy I'actory Managers' Association, was won by tilt Cheltenham Dairy Company with a score of 10ft points in the two classes which decided this honour. The Apiti Dairy Company was a close runner-up, with a score Of 189 V points. The championships in the cheese section have not yet been announced, and will not be given out until to-morrow morning. The .judging was carried out by the staff of the dairy division of the Agricultural Department, led by Mr. D, Caddie, Dairy Commissioner. Seen tin's evening, the judges had some interesting remarks to make on tho produce which came under their review. The exhibit of butter, they said, was a very creditable one, a large number of factories from different districts being represented. The general quality of tha butter was good, and some really firstclass samples were shown. While the body and texture of the majority of. the exhibits was all that could be desired, the judges naticed that quite a number of the entries showed some defect in colour. That is to say that some parts of some of the boxes exhibited! different shades of colour, known . to the trade as "streakiness." This, in the opinion of tho judges, was no doubt due to faulty manipulation in the use of the combined churn and butter-worker. At the samo 'time .(according to the experts), it is quite possible to achieve thoroughly uniform colour in butter with this appliance, although great care is necessary to obtain the very best results. Several of the exhibits evidenced l'athor serious defects iu flavour, and did not come well through the test for keeping quality. They conssqucntly could not receive a place amongst'the prize-winning exhibits.

The Judges Can "Safely Say ." "While ;.wc ! -.do not wish ,to make, any comparison between butters exhibited at the differsnt shows lliroujliout the Dominion," said the jiijlges, "we can safely say tliat the produce sent forward to l'alnierston North, taken as a whole, is equal to that sent in to an> of the shows, and a high decree of excellence was disclosed by the Cheltenham factory, which secured "the champion prize, the samples of butter from this company being somo of the S2en at this show. At the fame time, the Apiti' factory ran the winners very close indeed for the. coveted first pbsi'tion._ their butter .also being of splendid quality. The Cheese-Makers. Keferring to cheese, the judge said that the exhibits this year ore up to the standard of previous shows. The general get up of the exhibits is creditable to the makers, and, while some, fault could be .found in. the flavour of a number-of the entries, some iirst-class cheese was staged. According to the judges, tho cliccsc-niakers appear to have been successful in producing n satisfactory degree of uniformity as regards body and texture. They express the opinion that the chceses on show have just about tho right degree of firmness, and have also that desirable" characteristic called "mealiness," which is so much demanded by the trade ill Great Britain.
