MAKING WHEY BUTTER.

Since then the factory had been milking whey butter with success. Other factories had experimented with indifferent success, but this was not due to faulty whey, but to the methods of manufacture. Iwo pounds of butter could bo nude from evorv 10001b. of whey, and in a factory dealing with 50,0001b. of whey, 1001b. of butter weekly could be manufactured. In the district in question the best plan !would he to send all whey to a central .factory and allow one plant to treat the ■lot. -That would be the most economical mud practical method, and the delivery ■should be accomplished ns speedily as ': possible after reparation and nasteiirt-sat-on in order to secure the fullest ben.efit from the whey. ' In reply to a question Mr. Cuddle said .there was no great fortune in mnkinj: : whev butter, but in his opinion it could be made a profitable side-line it dealt with ;n reasonable quantities. ; A committee of factory directors, and .private factory owners, in the Carter!toii district, has been set up to go into the question.
