(Special); written for Tue Dosiihion.l SATURDAY. Steak and Kidney Pudding. Potatoes. Vegetable Harrow. Fig pudding. SUNDAY. Tomato Soup. Pioast Pork. Potatoes. Cabbage. Apple Sauce. Poach Tart. Custard Pudding. SCPPEK. Oi Tongue. Salad. Stewed Pears. Itice Mould. STEWED PEARS. Six or eight pears, water, sugar, 2oz. butter, the yolk of an egg, Joz. gelatine. Peel and cut tho pears into any form that may be preferred ,and steep them in cold water, to prevent them turning black. Put them into a saucepan with sufficient cold water to cover them, and boil them with (ho butter and enough sugar to sweeten tliem nicely until tender; then brush over with the yolk of an egg, sprinkle them with sifted sugar, and arrange them on a dish. Add tho gelatine to tho syrup, simmer it quickly for about smin., strain it over tho pears, and let it remain until set. Colour if liked with a little cochineal.
