WHEY BUTTER.
DAIRT COMMISSIONER'S VIEWS. A meeting of directors of the Ngaire, Lowgarth, and Cardiff Dairy Companies, all of which companies arc interested in cheese- production, was held at Ngaire this week to confer with Mr. D. Cuddie Chief of tho Dairy Division of the Agricultural Department, and discuss the possibilities of successfully and remuneratively manufacturing butter from whey. Mr. Cuddie, according to the Stratford "Post," went very fully into tho whole matter, and expressed the view that tho manufacture of whey butter was quite good business, provided always that a good articlo was turned out. This could bo done, and the thing was past the experimental stage. It was, however, imperative that the utmost care and cleanliness bo observed in the manufacture of whey butter, and, in fact, just the same care exercised as was required to produce a first-class butter from new milk. Mr. Cuddie went on to sound a note of warning that if the making of whey butter were undertaken and it _was discovered that it was not quite up to the mark, tho Government would insist on it being branded as whey butter. So long, : however, as it was of high quality and.l practically indistinguishable from ordin- • ary fresh there was no doubt it was just as good and as wholesome—<it would pass with ordinary creamery butter, and consequently maintain a liigher value. Mr. G. H. Buckeridge, who was present, said he knew of one company who liad. successfully made whey butter, ind was so assured of the future that :hoy had signed a contract to supply ' ivhey butter during t!ra wholo of their ieason's output, with a guaranteo to ;rado 90 points. Thi9 meant that tho ralue was as high as creamery butter.
