CANADA CHEESE.
KOTE OF WABXING GIVEN. In a recent address, Mr. J. A. Ruddiek, dairv and cold storage commissioner, deplored the green condition of cheese shipped from Canada to Great Britain, and uracil Canadian makers to hold their product until it was matured. Immature cheese from Canada, he said, was responsible for the really low prices secured bv Canadians in comparison with those secured bv Australian makers. He gave statistic showing the extent of the competition between Cnnada and Australasia in the British market, and declared that the onlv way for Canadians to hold their own in'this race for business was to give more ore to the curing of their cheese. Australasia was likely, ho said, lo l\|e first place in the international trade in dairv exports before many years. To-day the' United Slates was first as a cheeseproducing country, Great Britain second, and Canada third.
