MANUFACTURE OF WHEY BUTTER
Speaking at a mooting of Edendalo dairymen hist week, when a proposal to instill a butler-from-whey separator was being discussed, the secretary of the Edcndalo Factory (Mr. 11. E. Niveu) gavo the following data of experiments that had been carried out recently at Edendale Factor}', dealing with the economic aspect of manufacturing commercial butter from butter-fat extracted from whey. Three such experiments, says tho "Farmer," had been conducted, on December 4, G, and 11 respectively; and on cach occasion tlio quantity of whey manipulated was M 0 gallons. On ! the first date tho whey, before being I separated, contained .20 per cent, of butter, and after separation 0.5 per cent; second date, the respective figures camo to 0.18 and 0.02; third date, 0.17 and 0.01. On the first date 131b. butter was manufactured, the average thus being about 21b. butter or 1.631b. fat from every 100 gallons of whey; second date, 161b. butter (averages, 2.531b. and 1.C31b.); third date, 171b. butter (averages, 2.611b. and 2.121b.). The full cost of separation was lid. per 100 gallons of milk; the labour cost, though light, was not ascertainable, as the separation had been done by members of Hie general staff, (Mr. I). Cuddie, Dairy Commissioner, has estimated that the total cost of manufactur,in» butter from whey should not exceed 3Ja. for every pound of butter produced. Taking a line on tho season's milk supply at the Edendale (and two branch) ■factories as 20,000,0001b., that (at 21b. b.f. from every 1001b. milk) would give 40,0001b. butter, which at the mean price of Bd. a lb. would realise £1333. The estimated cost of production (all highly appraised) was £715, based as follows; Interest, 5J per cent, on .£3OOO, .£165; cost of manufacturing at Edendale, Menzies' Ferry, and Brydone factories, ,£500; carting and sundries, £50—which gave a net profit of £GlB. Every farthing received per pound above Bd. meant an extra profit of .£4l 13s. 4d. on 40,0001b. butter. The over-run (say 10 per cent.), which could be set against depreciation, would produce 40001b. butter, which at Bd. would give another , £133 16s. Bd. (Messrs. Cuddie and .Singleton's estimate of the cost of production worked out at .£660, or ,£49 less than Mr. Niven's estimate.) The speaker's estimate (a liberal one) of tlio plant required for working 14,000 gallons whey daily at Edendale factor} - and its two brauches was .£2650, made up as follows:—Buildings .£750, .5 separators .£IOOO, 50 gallon churn .£IOO, butter printer £30, pasteuriser £35, vats and cream cans .£3O, 3 pumps ,£25, wliev tanks £200, shafting and fitting up £125, coolers £20, shoots £80, floors at Edendale £75, engine £00, incidentals 130. The meeting unanimously decided to instal a plant.
