[Specially written for The Dominion." I'M DAY. Boast Loin of Venl. Bacon. Potatoes. Spinach. Crayfish. Mayonnaise. Street Omelet. Stewed Peaches. MAYONNAISE. Raw yolks of 2 eggs, 2 • tcaspoonfuls lemon juice, loz. butter, 1 teaspoontul tarragon vinegar, J gill cream, ■} 'teaspoonful mustard, 3 teospoonful sugar. Salt ami red pepper to taste. Put the butter, eggs, aud cream into a basin. Staud the basin in a saucepan with some boiling water in it. Stir over the fire until it thickens, it must not boil; then ndd all the other ingredients, and stir until cold. If not acid enough, add a little vinegar. FOR TO-MORROW. Two lb. Stoak. Peas. Gooseberries. Cream. Cheese. FOR SUNDAY. Hindquarter of Lamb. Mint. Peas. Fruit for Compote. FOR SUPPER. Two lb. Fillet of Veal. Cucumber. Strawberries. Cream. Gelatine.
