TO-DAY'S DINNER.

I Specially written for Tub Dominion.] TUESDAY. Boiled leg of mutton. Caper Sauce, Potatoes. Carrots. Turnips. Cherry custard. CHEERY CUSTARD. One small bottle of cherries, 6ozs. loaf sugar, 1 teaspoonful cornflour,. 1 toaspoonful lemon juice,., a few drops cochineal, 3 eggs,. 3 gills milk, 1 gill cream,-loz..castor sugar. Strain the juice from the cherries, and mix the cornflour to a smooth paste with 1 tablcspoonful of it. I'ut the remainder in a stewpan, with the loaf sugar, lemon, juice, and sufficient carmine to colour a rich pink. Simmer. 5 minutes.-. Add the . cherries (stoned), hnd'simmer for I.o.minutes. Beat ujv.tho eggs with the castor'-.sugar and cream.-.'Boil the mill;, pour if over them, and; two-thirds fill. a. .ouftered'.-pie.-: dish with- the-(mixture. (Add'one-fourth of the cherries (which should have been drained: from .'the syrup), ;and set the piedish in a .deep, tin haltVlilled. with hot water. i'-Bako in a cool oven 'until the' custard- is-set. Add the cornflour to the cherries, boil up, and simmer 10 minutes.
