(Speciallj written for Tn« DohwiokJ TUESDAY. Stewed neck of mutton and greon peas. ' New potatoes. Cocoa sponge. COCOA SPONGE. One pint milk, half ounce gelatine, two tablespoons of cocoa, two tablespoons of sugar, the white ol onti egg, hull' tea. spoonful essence of vanilla. Soak tho gelatine in a little of the milk, boil the rest, add the cocoa, and sugar mixed (o a'smooth paste with a spoonful of milk, mix ia tho gelatine and stir until dissolved, pour into a basin and when cold and beginning to set mix 'in lightly the white of the egg, beaten to a stiff froth, and the essence bf vanilla. Pour into a mould and leave until set. Th 6 cocoa, gelatine, and milk mixture should be stirred now and theii while gotting cold, or if will bo" patchy. FOR TO-MORROW. Two pounds steak, cut thicklj , , Worcester sauce, vinegar, cabbage, apricots, suet.
