(Specially written for Tag Douision.) THURSDAY. Sheep's brains a hi Heine. Potatoes. Spinach. Juuciue.t. Rhubarb. ■SHEEP'S BRAINS A LA REINE. Three or four sets brain?. '.' or ;i sago leaves, white stock or water: small piece of onions, :!oz. cooked lean limn, 3 gills Bechamel sauce. \V;i.-h tho brain.s _ and soak them in suited water for half an hour. . Drain them, put them on in clean water with tho sage leaves, onion chopped roughly, nnd a little salt. Bring slowly to tbo boil, and simmer gently for 6 minutes. Brain and skin them, nnd cut into halfinch pieces. Tammy the sauce, cut the ham into fancy shapes, put the bruins into tho sauce in a clean saucepan, staud on a hot part of tho stove to-thoroughly re-heat, serve on a hot dish garnished with pieces of ham. rOB TO-MORROW.
