MILK AT DAIRY FACTORIES.
TESTING FOR ADULTERATION. ■Tn a country such as this, wbere the milk supplied to dairy factories is purchased on the basis of its butter-fat content, says the Dairy Commissioner (Mr. D. Cuddie), in his annual report, it would not be expected that the milk would be adulterated to any extent; but there appears to be a mistaken idea amongst many suppliers that if they add water" to their milk there is less risk of its being rejected, and the percentage of fat credited.to them will not be reduced. The custom'of adding water to milk in the case of factory-suppliers has become altogether too common, and some stop will have to be taken to enforce the law in connection with it, to prevent its continuance'. ' Such'n practice is not only without profit to the supplier, hut results i\l a considerable loss being made by the dairy comnany or factory-proprietor. Accommodation for handling a larger amount of milk than is necessary is retjuired,- and much greater losses arc in consequence made in the by-products at both checse and butter factories.
