SOUTHERN DAIRYING.
PROSPECTS BKIGHT AND CHEERFUL "I have never seen the South looking better at this time of tho year as far as feed goes." Such was the finding of Mr. T. C. Brasch, who has just returned from a tour of tho South Island, which extended down to Invercargill. Everything is looking bright, fresh, and good, according to Mr. Brasch, and a capital season is assured. Last year quite a number of now butter factories were started, but owing to the dry weather they did not do anything. There are not many new factories this year, but the present is really the first normal season since many of the new concerns commenced. The Ta'ori and Peninsula, who have been mostly making butter in tho past, arc stated to bo turning some'of thoir. creameries inio cheese factories and some of the other larger creameries are demanding that cheese plants should b? installed, owing, to the high prices which are now be.ihg obtained for this product, and, according to Mr. Brasch, a syndicate has started at Oaivarn in opposition to the T. and. P , and is working altogether ,on home separation lines.
