CHEESE V. BUTTER.
VALUES IN FAVOUR OP CHEESE,
Commenting on the butter and cheese markets yesterday, a local merchant remarked that to-dav cheese factories were paying 12Jd. to 13d. for butter-fat, whilst the butter factories were paying lid. to 11U1. In the past it had been recognised that there had been ltd. to 2d. per lb. difference in values on butter-fat, as against tho value of whey and skimmill; for nig-feedine and calf-raisin? purposes. This belief was gradually being dispelled, because it lihd been' proved that skim-milk contained very little food. It seemed to him that unless the Government 'Was going to enrc-urase the utilisation of. casein and milk sugar in the skim-milk, as promised all our butter factories would become cheese factories, unless the price of butter was raised to such a level that they could pay the same prices for butter-fat as for cheese. This was a reallv serious nur.stion for the consumer, and one which had to be faced in tKe near future, for, by all accounts, it w.as most, unlikely that cheese would rule much lower than it is to-day, for some years to come.
