Half-pound figs, -J yo'.ks and 2 whites of o»?.s loz- castor sugnr, 1 pint milk, lor.. gelatine. rut the in a saneppnn with puuicient water to oover them, and stow them gently until tender. .Boat tho yolk s ! and whites of csgs, heat hut do not boil the milk, pour it over the eggs, m<l add the sugar. Put the mixture in a. jug, stand the ing in a saucepan of boiling water, and "stir tho custard nntil it thickens. It must not boil or it will curdle. Dissolve tho gelatine in two tablespoonfuls of tho water the figs were stewed in, and strain it to tho custard. Chop tho figs finely, and add them to the custard. When the mixture is inst going to set pour it into a wet mould, and leave until cold. Turn out and servo alone or with custard sauce poured round. FOR TO-MORROW. Two pounds steak, 2 sheep's kidneys, pastry, green peas, strawberry jam.
