SOYER'S BOOK.

PAPER-BAG COOKERY. Messrs. George Robertson and Co., Lid., Melbourne, have .forwarded for review Soyer's book on . paper-bag cookery. 'Jo many people were seized with enthusiasm for this method of cooking a little while ago that one cannot imagine that they have relinquished it and, to them, (his little book may prove useful. Soyer docs not claim t'o be a discoverer-, but what ho does claim is to have applied the principle of paper-bag cookery in a more extensive manner than was imagined to bo possible by epicurcs and experts in general cookery. Soyer says that English produce, in respect to flavour and quality, is second to none in tho world, but the ordinary cook fa.ils to make the best of it. By paper-bog cookery that reproach will bo removed.

A time-table for the recipes given is set out in addition to explicit directions for all the dishes ho mentions. Tho recipes are varied, and include several for different kinds of ilsh, entrees of all descriptions, various roast meats, how to- cook poultry, vegetables, savouries, sweets, and several cold-meat, and breakfast dishes. Nor is invalid cookery neglected, several recipies being given for tho benefit' of sick people. At tho end of tho book a week's dinners for tho working man's home aro given, the homo consisting of father, mother, and t'hreo or four children ranging from twelve to fivo rears of age.

Tho strong points of paper-bag cooking have been so often placed before people in Wellington that it seems idle to repeat them. To those who wish to continue this form of cooking, Soyer's book will bo of tho greatest use, and to those who are curious enough to try his method, the directions 'given «ro simple, and may very easily bo followed.
