UTILISING WASTE PRODUCi'S. A statement in the Budget to tho effect that tho Government is taking into consideration the question of turning to profitable account the waste products from tho butter aiid cheese factories was the subject of comment by a well-known but-t-:r more hint yesterday. "Looking at the matter from a general standpoint," said the merchant, "1 am under tho impression that it tho above suggestion is given effect to it will mean a considerable profit to the. suppliers of tho various companies, and it is of particular interest to tho industry, as 1 consider it will affect very considerably the pricc of butter. There is at present a possibility that factories now making butter will go in for makirig cheese, on adcount of the high prices which aro ruling for the latter enmmod ity. For instance, one pound of butterfat produces about l?oz. of butter, or about 2!lb. weight of cheese. As butter this year has been sold for export at 11$<1. and choeso at 6J<l., it will be seen that chcesc gives 25 per cent, better results to tho farmer. This means that- either one of two things has to be done, viz., rise the price of butter so that butter factories will be able to pay a price on a level with the cheese, factories, or utilise the byproduct; (skim milk, etc.), and so be abio to make up the deficiency by this roeai.s. I understand that one factory in the North Island is going in very extensively for the manufacture of casein."
