TO-DAY'S DINNER.
(Specially written for Tub Dominion.) WEDNESDAY. Barley Soup. Grilled Steak. Potato Chips. Parsnips. . Apricot Sponge Pudding. APRICOT SPONGE PUDDING. 4oz. flour, ■ 4oz. butter, 4oz. Demarara sugar, 2 eggs, 2 tablcspoonfuls of apricot jam, 1 tablespoonful of uiilk, i teaspoont'ul of carbonate of soda. Foamy sauce. Sift the tlour and carbonalo of soda on to a piece of paper. Cream the butter and suga.r, and beat in the eggs one at a time. Add tho Hour, soda, apricot jam, ami milk, and stir all lightly together. Put into a greased basin, cover with a greased paper, and steam two hours. Turn out and serve with the following sauce. i FOAMY SAUCE. 2oz. butter, 2oz. sugar, 2 tablcspoonfuls boiling water, the juice of I lemon (strained), 2 yolks of eggs. . Put the butter and sugar into a basin and cream them together. Beat in the yolks.- Stand the basin over a saucepan of boiling water. Add the other ingredients by degrees, and whisk the sauce until it becomes thick and frothy. It must not boil. FOR TO-MORROW. Neck of Mutton. Curry Powder. Chutney. Apples. Spinach. Puff Pastry.
An "At Home." On Saturday afternoon Mrs. Wilson, Lauriston Street, was "at home" to a Targe nuiiibei ot friends Tim guest of honour was Miss. Cuff (Loner Ilutr), who is to be married to Jfr. Turner early-next month. The three reception rooms were prettily decorated with spring flowers and tea and coffee were served in the diningroom. Musical items were given hv Mrs. Cuff the Misses Cuff (2), Taylor, RapJey (2), V. Wilson, and recitations by Mrs. Sutcliffe and Miss S. Rapley were much appreciated. Mrs. Wilson received in' a handsome black velvet gown. Miss Freda Wilson wore dainty white muslin; .Miss Cuff, cream silk relieved with touches of green. A Presentation. On Friday evening the staff of Messrs. George- Doughty and Co. gathered to make a presentation to Miss Paul, who was leaving for Napier, and so severing her connection with the firm. Tho presentation, which consisted of. a silver-mounted brush, comb, glass, and trinket-box, was made by the firm's accouutant, Mr. D. E. I Barnes, who made complimentary reference to the high qualities of his departing co-worker. Miss Paul left for Levin, en route for Napier by tho 4.15 p.m. train on Saturday. The marriage of Miss Edith Annie Olivers to Mr. Colin Campbell Morris takes place at St. Hilda's Church, Island Bay, on Wednesday, August 30. A reception will bs hold afterwards at tho residence of Mr. and Mrs. R. Kcene, Island Bay. Members of the Arts Club, assisted by members of tho Liedertafel, Savage.Club,' and Shakespeare Club, in addition to other well-known local performers, . arc giving a concert in the Academy Buildings, Whitraore Street, en Mcnday, September i. The Premier and Lady Ward, the Acting-Premier, Sir John Findlay, a.nd the Hon. George Fowlds will, it is hoped, bo able to be p-resent. Miss Ewen, who'has been stoyine with Mrs. Wilson in Wanganui, h?.s returned to Wellington. The concert and dance held at Eastbourne on Saturday evening last in aid of the scbool ground improvement fund, yielded about .£!). Thanks to the enthusiasm of residents the schcol grounds are being improved out of all recognition, and what was formerly a wa<-te will, in a little while, be most attractive looking.
