CARE PREVENTS TAINTED MILK.

Tho dairy department of the Wisconsin College of Agriculture is now receiving milk and cream from over 200 farms, ana from 1500 to 200011). of butter, 1001b. of cheese, ami a small amount of ico cream are made daily. In addition 100 gallons of cream are pasteurised, bottled, mid marketed each day. It really requires little care and attention, to maintain niflk and cream in a clean, sweet condition even during hot, sultry weather. All tlifit is necessary is to properly clean tho cows, the milk cans, the KU-ed and to efficiently .cool and caro for the miik.

The following regulations pertaining to sanitary management of tho herd and care of tho product are observed by patrons of the university crearitsry:— All milk cans should bo washed first in cold water, then thoroughly Icloansed with warm water, and finally rinsed in scalding hot water. These cans. should be washed as soon as received from the creamery and kept in a clean place protected from dust and bad odours. Exposnre to direct sunlight is especially beneficial. Each cow's udder should be thoroughly cleansed before milking, and the hands of the milker should'be absolutely clean-and dry. The milk shouM bo •• strained through one thickness of clean'white flannel and then should bo quickly cooled and well aired. . Pouring or dipping tho milk several times from one can to another rapidly accomplishes this'purpose. Warm milk should never be poured into cold milk, nor should the -night's milk bo mixed with the morning's milk. .Milk should .never, be exposed to foul air in the cowshed or in dirty tanks before it is delivered to the creamery.

Tainted, musty,, or mouldy feeds should never bo served in the dairy herd rations. An accessible supply of pure, cold water should always be, available for the herd. Bloody milk or that froni a sick cow should never be mixed with wholesome milk. : Tho milk from a new milch caw should not ..be, brought to the creamery until at least a full week after tho cowhas calved. The uncovered cans of milk should-be kept in cold water until they are delivered to the creamery. • The cowshed should not be cleaned or brushed, - nor should silage or .roughage be fed until all the cows of the herd are milked.
