TO-DAY'S DINNER.
(Specially written for Tub Dominion.) WEDNESDAY. Celery soup. Beef olives. Mashed potatoes. Apple fritters. Rico pudding. BEEF OLIVES. One pound fillet of beef, 2oz. breadcrumbs, loz. chopped suet, 1 dessertspoonful of chopped parsley, i trcspoonful of chopped thyme, a little grated lemon rind, egg or milk to blend, pepper and salt to taste, loz. butter, i pint m warm stock, 1 dessartspoonfnl of flour. Flatten tho pieces of meat with a cutlet bat, spread a portion of the forcemeat on eacli piece, roll up am! tie with string, melt the butter in a stewpan; when quite hot, nut in the olives, and fry them a nice "brown; pour over them a pint of gcod flavoured stock; let them simmer gsntly for an hour; thicken with the Sour; add pepper and salt;, servo with gravy poured over them.. FOR TO-MORROW. Stock. 2 tablespoon!'ills of cream. Leg of mutton. Capers. Spinach. Treacle. Suet.
