TO-DAY'S DINNER.

(Specially writteu for Tiie Dominion.) THURSDAY. Vegetable Soup. Roast Loin of Pork Stulfed. Apple Sauce. Baked Potatoes. Brussels Sprouts. Pancakes. PANCAKES. Four ounces Hour, a pinch of salt, 1 egg, pint of milk, loz. sugar, 1 lemon. Sift tlie flour and salt, make a well in the middle of the Hour, break the egg and pouv it in. Mix the flour gradually from tho sides, adding the milk a little at a time. When half the milk is used all the Hour must be moistened, then beat it well to removo all the lumps, and beat in the air bubbles. Stir in the rest of the milk, and allow the batter to stand for at least two hours. -Have ready all things' arranged conveniently near the stove. Put a small piece of butter or fat in the pan, burn it, and wipe quite dry. Put another small piece of butter in the' pan, melt it, pour in a little batter moving the pan about, and so spreadin»' evenly over it. When quite set, loose tho edges with a knife, and then either toss or turn it. When slightly brown on. the other side, slip on to a sugared paper. Melt a littlo more butter in the fryingpan, pour in the batter as before, and while this is setting roll up. tho first pancake, sprinkle with lemon juice, and put on a plate over a saucepan of boiling water. Serve on a dish on a d oyley with thin slices of lemon and castor sugar sprinkled over.

FOR TO-MORROW. Half-pint of lentils (soaked in cold water). Stock. Schnapper. 2 dozen oysters. Cauliflower. Chocolate. Vanilla Essence.
