Tonioana works on March 16, under an entirely new 'chilling process, arrived ill London 011 tho Muritai 011 May 1 in excellent condition after a 55-day voyage. There were (B hindquarters and 10 forequavtei'S, nnd these were marketed at Smithficld on April 5, the hinds making Id. and the fores 3;d. This is' a Terjr satisfactbry result, and all the more satisfactory when it is borne in mind that no chemicals whatever are used to assist refrigeration in this proecss. Tho patents, of'which I am not in a position to give particulars at the present moment, arc /taken out in the names of Sir Montague Nelson. M>. Tyser, and Mr. Dicks, of the C.C. and D. Company, and thorough dry-in? of the air admitted to; the cold chamber is, I understand, the foundation of the new system. Vt'ith strops promoters behind it, and confirmed initial success, the process should have a bright futnro before it. The ability to carry meat with a soft surface from one side, of the world to the other should largely influence the position of New Zealand meat iu tho English and other markets. I have little faith in chemicals, and believe they will never gat'past tho barrier which is fortified by, strojig scientific testimony on the Continent of Europe. I believe, moreover, that the last ivord has not been said in official quarters in England as to the use of chemicals in the preservation of food'; but bo this as it may, it irill be extremely interesting to watch the progress of the' Nelson process. I haye no doubt that it will be possible to apply'it to mutton also,-which cannot be 'Tions with the chemical systems."
