(Specially written for Tuj DoutmotJ.) SATURDAY. Sago Soup. Beef Olives. Potatoes. Artichokes. Golden Pudding, Sweetmelted butter. SUNDAY. Kidney Soup. Roast Beef. Horseradish Sauce, Baked Potatoes. Baked Parsnips. Applo Tart, , Caramel Custard. Cw n, mm' V Cold Eee.tr '- r &bbi / \ . Salad. Apricot Gateau. ' Co. Oibinot Pudding. Cr ,1111. APEICOT GATEAU. One tin of apricots; 3 tablespoons of 6ugar, loz. gelatine, a few almonds. Strain tho syrup from the fruit, and add sufficient water to mako six gills. Soak the gelatine In it, add the sugar, stir over the fire until it boils and the gelatine is dissouved. Blauch tho almonds, and chop them up Arrange- the fruit in a wet mould, sprinkle over the almonds, strain over it tho syrup, and allow it to set. Turn out and serve with cream.
