BUTTER OF CHEESE.
DAIRYMEN'S DISCUSSION. The Pahiatua "Herald" reports that a meeting of dairy farmers "interested in tho financial aspects of cheese against butter manufacture" was held at Scarborough. A number of settlers from Konini and Scarborough attended, and also Messrs. Bodmin and Brechin (directors of tho Eexdnle Dairy Company), Mr. Thomas (secretary of the Mangaramarama Co-oper-ative Dairy Company), and Mr. A. MTarlane (chairman of tho Ballanec Dairy Company). Mr. M'Farlanc said that if cheese plants were added to the Ballance Company's stock there would be depreciation to pnv on two plants instead of oue. It would also mean building new structures as the present buildings.,were not suitable, or large enough, to hold tho required number of vats. It would require nearly double the capital to ius'tal a dual plant, and if it was carried out each supplier would have' to bear n share of the cost. Speaking with reference to tho by-pro-ducts, Mr. Brechin said that his returns froni whey wero 50 per cent, less than from skim-milk. He had not done well, with pi;s without a large expense for grain. He found, however, that calves fed on whey and linseed- did rcmnrkablv well. As regards tho relative value of cheese, and butter he believed they were on-tho'ovn.of a great development in tho dairying industry from a scientific point of view;.. A valuable commodity, casein, was procurable from skim-milk, which was not obtj-'nablc from whey. Since delivering to the cheese factory bo .considered ho received Id. per lb. of butter-fat more than at the butter factory. An average cow would vield 2001b. of butter-fat in a season. This meant a difference of nearly il ner cow. Seven years hence New Zealand would be the greatest.cheese-produc-in? country in tho world. If was- resolved, to appoint a commutes of five to thoroughly investigate th» matter, and interview the directors of the Ballance- Dairy Company with refer-ence-'to the installation of a dual plant.
