TO-DAY'S DINNER.

(Specially written for The Dominion.) WEDNESDAY. Baked loin of mutton. Bnked potatoes. Stewed onions. Apple and rice meringue. APPLE AND RICE MERINGUE. One dozen apples (small), Boz. sugar, i pint of water, Jib. rice, a pinch of salt, 1 pint of milk, 2 tnblcspoonluls of sugar, i pint of water, whites of 3 eggs, loz. loaf sugar, carmine. Peel and cut tho apples into quarters; boil '3-pint of water and tho sugar together. Then, add tho apples and simmer until soft; wash the rice, and put it into J-pint of water, boil until the rice absorbs the water, then add the milk and salt, and boil until all the milk is ab-sorbed;-add the sugar when the npp'cs are soft; pour on to an oval dish; heat tho whites of tho eggs to a stiff froth. When the rico is cooked pour it over tho apples, raised in the centre; put the white of egg on top, nnd sprinkle with pink sugar; put it into the oven to brown slightly. /FOR TO-MORROW, ljlb; nock of mutton chop?. 2 dozen ovsters. 3 or 4 shallots. 2oz. macarini.
