TO-DAY'S DINNER.
(Specially written for The Dominion.) TUESDAY. Calf's head, with parsley and lemon sauce. Potatoes. Roly-poly treacle pudding. BOILED CALF'S HEAD. , Calf's head water, a little salt, | pint of melted butter, 1 tablespoonlul of minced parsley, pepper, and salt to taste, 1 tablespoonlul of lemon juice. Atter the head lias been thoroughly cleaned, and the brains removed, soak it in water to blanch it. Lay the brains also into warm water to soak, and let them remain for about one hour. Put the head into a steivpan, with sufficient cold water to cover it, and when it boils add a little salt; take off every particle of scum as it rises, and boil the head until perfectly tender. Boil the brains, chop them, and mix them with the melted butter, minced parsley, pepper, salt, and lemon juice in the above proportion. Tako up "tho head, skin the tongue, and put it on a small dish, with the brains round it. Havo ready some parsley and butter. Smother tho head with it, and send tho remainder; to table in a tureen. Bacon, ham, or pickled pork are indispensable with calf's head. FOR TO-MORROW. Loin of mutton. Onions. Apples. Eice.
