TO-DAY'S DINNER.
(Specially written for Tiie Dominion.) THUESDAY. Bruised leg of mutton. Carrots. G onions. Savoury herbs. Parsley. Bacon. I'cars. BRAISED LEG OF MUTTON. One small leg of mutton; i carrots; 3 onions; savoury herbs; parsley; seasoning *o taste; a few slices of bacon; a few veal trimmings; J-[iint of water. Lino the bottom of a braising-pan with a few slices of bacon, put in" tha carrots, onions, herbs, parsley and seasoning, and over these place the mutton. Cover the whole with a fow more slices of bacon, and the yeal trimmings (if you have any), pour in the water, and stew very gently four hours. Strain the gravy, reduce it to a glaze over a sharp fire, glaze tho. mutton with it, and send it to table; place on a dish of haricot beans, boiled tender or garnished with glazed onions. FOE TO-MORROW. Two or three soles. Breadcrumbs. Lemon. Cauliflower. Macaroni.. Cheese.
