TO-DAY'S DINNER.
(Specially written for Tni! Dominion.) THURSDAY. Mutton Cutlets. Potatoes, French Beans. Blackberry Tart. Kice Pudding. Cream. MUTTON CUTLETS. Seven cutlets, 1 egg, 5 peek of peas, loz. butter, 1 teaspoonful of arrowroot, 1 teaspoonful of sugar. Flour, pepper, and salt, mint, 3 gills of stock, 2 tablespoonful.s of milk. Mashed potatoes. Trim tho cutlets. Dip in the Hour, pepper and salt. Then cover with egg and breadcrumbs. Put tho stock on to boil, when boilin" add the peas, mint, sugar, and a pinch of carbonate of soda. Boil gently until quite soft, then rub through a sieve with the. liquor; return to the saucepan, bring to the boil and thicken with the arrowroot dissolved in the milk, add tho butter. Dry fry the cutlets, drain on paper, and dip each into pea puree. Serve on a border of mashed potatoes. FOE TO-MORROW. Four Flounders. Two Lemons. Macaroni. Tomatoes, Ginger. Treacle. Suet.
