LONDON'S HEAT SUPPLY. ■ The weight of supplies dealt with at the Cqntral Markets, Sroithflold. during tbo year ended December 31. 1910, aggregate 419.450 tons, as against 520,0e0 tons In 19C9, and is 2377 tons below the record your of 1906, when 421,927 tons were dealt -with. Of last yoar'B total 51.5 per cent, was bejf and veal, 34.7 ijcr cent, mutton and lamb. 7.5 per cent. poTk. ar.d 6.3 por cent, poultry, came, rabbits, otc. British produce opuallcd' 22.5 per cent, of the total, Australasia contributed •. 25.2 per cent., South America- 29.2 per rent, North America 10.5 per cent., and Holland and other countries 12.6 per cent. Australasia contributed 20,434 tons of beef and veal out of 216,121 tons, and South America ICO.CCO tons; tho Australasias contribution of mutton and lamb amounted to 80,828 tons, ont of a total of 145,367 tons. In effect just four out of every flvo tons of meat' dealt with on tho market was imported, anl-largely dependent upon refrigeration, which is moro than evor. becoming tho principal controlling factor in tho meat trade.
