To boil the hocort, wash it well, jnitit into a snucepnn with eriough cold water to cover it; let it boil,-then skim, simmer twenty minutes to each pound.and 'twentj- minutes , extra. When, cooked lift it out, serve on a hot dish, with benns and sauce Jn a' separate dish, To boil tho beans, take about 21b. yoiing broad beans. . About'.half an hour before the bacon is cooked tako out two quarts of liquor from it into another saucepan j ndd boiling water to; re-flll the pan whioh has the bacon in. Let the bacon liquor boil, put in tho beans, and boil until soft. ' Drain, them, put ! them into a vegetable dish, and pour parsley sauce oyer them. ' FOE TO-MORROW.
