PARAFFINING CHEESE.
N.Z.'TRIAL SHIPMENTS. The Rongokokako (near Eketahuna) choese factory is sending Home a small trial shipment of paraffined cheese. Tho present quantity so treated is ten cases, , and it is understood that tho intention is to paraffin similar quantities for each •- shipment,during"this season. The main'object in paraffining cheese is to': lessen-'shrinkage. If that can be effected and the cheese landed in England in thoroughly desirablo condition a monetary, gain may be looked for. A writer in the"Wairarapa Daily Times" : estimates'that that saving would be, - roughly,' .£400,: for the three; factories operating 111 the Eketahuna district. Rongokokako is not. by any means the only factory, paraffining small quantities just'now. 'Sevoral South Island concerns are . doing it, and some in tho North Island. ' The" practice has been adopted on large / scales in other countries, notably Canada. This'is not the first season in which paraffining, lias been tried in New Zealand. In the 1903-1909 season an ex- . periment was .made witli about 300 cases. Some .'were shipped and some held and sold within the Dominion. The latter'when sold was in a satisfactory : condition, -but! tlio. shipped portion 'was carried' at top.great,a temperature. The whole. matt'er-is'o'ne which needs the most careful handling.
