TO-DAY'S DINNER.
(Specially written for The Dominion.) " ' THURSDAY. Boiled mutton. Potatoes. Carrots. ■ - Turnips. Baked lemon pudding. ■ ■BAKED LEMON PUDDING. Two lemons, 3 eggs, 3 penny sponge cakes, 2oz. sugar, J-pint milk, loz. butter, pastry. .Line tho sides and edges of a pie-dish with pastry. - Molt the sugar in tho lemon juice, add to it tho grated lemon rind and the crumbled spongo cake. Heat the milk, dissolve the butter in it. Beat tho yolks of tho eggs, pour over them the milk - and butter, and add this to the lemon, and sponge cako mixture. Put it into the pic-dish, and bake for about half an hour in a moderate oven, until sot, but not coloured. Beat the white of the eggs to a firm froth, pilo them on the pudding, sift sugar thickly over and return to tho oven until tho meringue is hardened and lightly coloured. Serve hot -or cold. FOR TO-MORROW. 4 flounders. Tomatoes. Ham, Parsley. Fruit. Pastry.
