TO-DAY'S DINNER.
(Specially written for Tire Dosiiniok.) - ' WEDNESDAY. Boast'shoulder of mutton. Potatoes. Cabbage. Beignets souffles. BEIGNETS SOUFFLES. Half-pint of cold water, loz. sugar, loz. butter, the grated rind of a lemon, 4ozs. flour, a tiny pinch of salt, 3 yolks an<( 4 whites of eggs. Put tho water, sugar, butter, and lemon peel, and salt into a saucepan, and bring it to the boil. lift oft' the fire and stir in the flour; it should form, a good stiff paste. Return to. the fire and cook until the mixture leaves. tile sides of the pah. Remove from tho fire, stir in the 3 eggs one at a time, and beat well ' for about ten minutes. Beat tho remaining white to a stiff froth, and stir in lightly to tho mixture. Let the mixture remain for two hours if time allows. Have ready .some hot fat and drop in pieces about the size of a walnut. They should swell very much. Not too many must bo dropped in at once, and tho fat must not bo quite as hot as' for ordinary frying. Lift out, drain on kitchen paper, sprinkle castor sugar over, and serve at once. 1
