Cook in a modprito oven for 15 minutes, reimove the paper and'rice, and partly, . fill the little' cases with a preserve made: - with 2, tablespoons of apricot jam,: Jib. preserved' fruits, cut up "finely,, .and a' few drops.of essence' of-'vanilla. Then with a forcing bag arid pipe fill.up with tile 'following hieringuo mixture Whip 2 whites of eggs-, to. a stiff froth with a piiieh of'salt, then, add Jib. castor sugar, mix with a wooden spoon, and use: • l)ust the top of. each tartlet with icing sugar, : and dry in. a. cool oven- until a light brow'n colo.ur.
