(Specially written for The Dominion.) FRIDAY. Pish quenelles. Potatoes. Cauliflower, i Gingerbread pudding. '< 1 FISH QUEXKLIES. _ Pound one pound of raw fish and pass it through a sieve. Soak half a po.und of ■bread-'in! milk, ..squeeze, it dry, and mix the fish with the breadcrumbs and half a : pound '■ of butter. Mix well, and season with' salt, pepper, a little nutmeg, and a little cream; ono whole egg and as many yolks lis may bo necessary; to bittd the mixture; Shapo into small quenelles with two dessertspoons, poach in stock : or put Into email moulds, and steam 20 minutes, Serve with-shrimp eauco. ■ ■■•: FOE TO-MORROW. Two pounds neck or fillet of veal, some sice bacon, pastry, cabbage, prunes, . • , " FOR SUNDAY. Ono tin 'of tomatoes, {stock, sirloin of 'xsef, green poas, rhubarb. '; : ; FOR .SUPPER. Half a dozen eggs, aspic. jelly, salad,. chocolate, gelatine, fruit, pastry, cream.
