Addressing the dairy factory man! agors of New South Wales, Mr: O'Callaghan, tho State dairy expert, criticised tho butter 'standard recommended by tho recent Pure Food Conference. Ho said he considered that, if tho Federal Government adopted the standard, those manufacturers who submitted for" sale, or exported, butter containing less than eighty-four per cent, of butter-fat; more than fourteen per cent, of water; or more than three per cent, of boric acid would be dealt with for selling adulterated butter. On an average Now- South Wales butter only contained eighty-threo per cent, of butter-fat and 13.5 per cent, of water.
