Cheese Tartlets.-2 egg yolks, 2oz grated cheese, salt, coraline pepper, 1 tablcspoonful flour, 1 tablespoonful butter, 1 teacup milk. Make a' giil of thick white sauce with butter, flour, nnd milk. Beat tho whites stiff, mix the yolks and cheese with sauce, season with salt, if required, and coraline pepper. Add the whites the very last.. Line smallest of patty pans with good'puff paste, more than half nil with cheese mixture, and bake twenty minutes, not opening oven door if possible. • FOR TO-MOEROW. Stock. Vegetables. Pears.
