One ponnd and a half fillet of steak fcut into neat pieces about inch thick, lay them in a baking-tin which has been veil buttered, put a piece of butter on top of each and bake in • a quick OTen about 20 minutes. Dishin a circle on the ..-disH, fill the centre with, olive potatoes »nd,pour soubise- sauce round. ■ .OLIVE POTATOES. Potatoes cut the shape of olives, boiled tabont 7 minutes, then well dried in a doth,:' and fried 10 or 15 minutes in jooUpig fat.,. - :■ : SOUBISE SAUCE. Three onions;, i oz. butter, 1 oz. flour, I pint milk, salt and pepper. Peer and slice, the onions, put into cold salted ■water,: bring to; the boil,' boil 5 minutes, ■then ' strain; now put on in the milk and .bofy until quite tender, and then .pass; through a sieve;, fry butter and ■flour without 1 browning, then add onion and milk, pepper and salt; boil 2 or 3 minutes and use; if too thick- add a little more milk;- or still better a little cream. . . - ■ ■ • FOR TO-lIORKOW. . ■ , JVo-pounds Mutton Cutlets.
