Three pounds of neck of mutton, 2 or 3 onions, 1 carrot, 2 cups stock or water, heibs, 1 turnip, 2ms. dripping, 1 tu{ tcspoonfu! of flour. Pepper nnrl salt. 'Have tho best cncLcif the neck 0 ,. Join chops Trim tha cutlet xai Leat each , . > about 1 ini'h m thickness/leaving about an inch ond boae. , Brown the cut-up vegetables and the ojllets in dripping; remove them and pour off thti grease. Pour in the-stock and add the flour mi ted 6mooth with cold water. Strain it and Snt in 'a oloan pan. Boil up tho gravy, add ie cutlets, and stew for J hour Then add the vegetables and simmer ogam until theso are cookk/ Dish the vegetables m the centre, tho ( chops round, andtpour over the gravy. Small; £nions may be used with 1 large one, the 'former kopt whole and added with the other \egetables. FOE TO-MOEKOW. One leg of mutton, beans, onions, chocolate, vanilla.
