MR. TURNER ON BUTTER.

"FISHINEBS" WORSE THAN WATER. Mr.' S. Turner, F.R.G.S., who is familiarly known in Taranaki 'as the Napoleon of .the butter trade, has been" appointed Australasian supervisor for Messrs. J. anil J. Lonsdale and Co., Ltd.,: the' well-known British produce firm. Speaking to a Dominion reporter on the subject of moisture in- New Zealand butter this season, Mr. Turner considered that greater danger existed in -the "fishiness" which had been rather pronounced in the past year. "Fishiness,"/ 110 said, "is the main thing the factories have to consider. It will pay theni to go to any expense .to.' discover the cause and have it remedied.' Some people-think it is due to too much moisture, but after careful inquiry I am inclined to think it is not water ,at all, because New Zealand, on ' last year's allowing, with the exception of just two or tbreo cases, is not putting too much water in the butter at. all. But in the two or throe cases- the, excess was. probably due to inexperienced use of the combined churn. If every manager aims at 13 per cent., he ought to get the desired : result. If is, of-course, better to have 2 per cent: less than J per cent, over the 16 limit "The. prespocts ? Well, they aro for a large make from Siberia and a good'make of cheese in Canada, and also in New Zealand. Big cold stores have been erected in Siberia, so that the supplies may be regulated. Very big prices have gone, for some timo. Nothing less than a drought in Australia and Siberia can revive'them, but'it is yet early to predict exactly what next season' 3 prices will be. In the next month the prospects of the English trado ought to become clearer' ■ Mr. Turner says his firm of Messrs. J. and J. Lonsdale and Co, Ltd., from their six warehouses in 'different parts of Britain, supply more small retail grocers direct than any other firm in Great Britain'. They took over two of Me«rs. Wilier and Riley s biggest branches with the names of 90 per cent, of their customers.
