Melt in a saucepan 2oz of dripping, add to it 2 small sliced onions Fry these a golden ' brown; dip tho slices of kidney into tho mixture _of flour, salt, etc Put them into the eauoepan with the dnions. Cover the pan, and cook for ten minutes, turning tho kidney over now and then Nest dram off as much of tho fat as possible, and put in i half a pmt of tomato pulp, that is, some tomatoes cooked until soft iin a little water, and then rubbed through a sieve tPnt in, with this pulp 2 teaspoonfuls o! vinegar, X teaspoonful of parsley, and 1 teaspoonful each of made French and 'English mustard Boil up again, and 6immer for 15 minutes Pat a neat border of mashed potatoes round a hot dish Turn the kidney and sauce mto'the centre.
