MOISTURE IN BUTTER.
A HOME MERCHANT'S WARNING. ■ (By Telegraph.—Press Association.) I(TT , ~ Auckland, June 17. Unless che-_ manufacturer o£ butter in Now Zealand is conicnt to use less creek ;water m ifte butter, there is a risk of our reputation for quality in dairy produco being entirely lost." This is the opinion of Mr. J. i. X earson, managing director for Messrs. 1 earson and Rutter, of Manchester and wverpool, who is at present'on a visit to Auckland. x Mr. Pearson referred to a cablegram published receirtly which stated that tie London Uaamber of Oomimerce intended urging the New Zealand and Australian Governments to strictly limit the percentage of moisture in butter. He said that Uiere had been a good deal of complaint in England regarding the dotonoraiion in quality of New island huttor, while complaints were nearly always more plentiful when the-market was bad. Unfortunately there had been real ground for complaint lately owing to the' unfortunate tendency of butter-masers to increase tho percentage of moisture. This tendency was not only going to do harm to the. factories m but to the industry as a whole. .on the Home market had changed lately, as not only did the blenders, who were one of the most' important dosses ot buyers, test better for moisture, but the bettea- class of retailers also regularly tested tor their own proteotion in caso they were' prosecuted against under the English law. Ino effect of this was that buyers avoided those brands of butter found to persistently approach the danger limit in respect to percentage of tMMsture. .. •
