Jib. butter, 1 teaspoonful of lemon jmoe, a pinon of salt,' cold water to mix. Press all water out of the bntter, and press into a flat cako about 5 inches square. Put the flour and salt into a basin. Make a well, and ' addjemon juioo and water gradually, and work with first and second finger to a stiff paste. Knead for ten minutes. Then roll out twioe tho size of the butter. Put the butter on one half, fold the other half over, seal the edges, end stand on one side for J hour. Then turn with tho folded side on your left handi roll out, fold in three, and again lot it stand for J hour. Repeat this until the pastry has been rolled and folded six times in all, then roll , out the size required. Pastry should be kept as cool as possible while.making, and must be cooked in a quick oven.
