Flatten the pieces, of meat with the cutlet bat, spread a portion of the forcemeat.made from: the'above ingredients on each ■piece, roll up, and tie with string, or faston ■with, a 6mall,skewer. Melt.'the butter in a Btewpap;, when quite hot, put in the olive's, fry them a nice brown. Pour over them a pint of good flavoured stook.'
