IBpeciaimt Written fob Tub .Dominion.] TUESDAY. Roast Leg of Mutton,' with Tomatoes and Mushrooms. Baked Potatoes. ' ✓ Ginger Pudding. LEG OF MUTTON, WITH TOMATOES AND .MUSHROOMS. Take a leg of mutton, about 8 pounds, that has been well hun<r, trim it, wrap it in a frcnsed paper, and bake it for 2 to 2J hours, eeping it well basted; when cooked, "dish up and garnish it round with tomatoes and mushrooms prepared as below. Dish the tomatoes and mushrooms alternately round the mutton; pour the gravy from the tomatoes and mushrooms into a sauce-boat. Prepared Tomatoes.—Peel and cut the tomatoes in halves, season them with a little coralline pepper and salt, and cook them in a tin in the oven for about 12 minutes, with a little butter or dripping; put a greased paper over them . and baste occasionally. Prepared Mushrooms.—'Well wash the mushrooms, peel and dry them, put them into a 6aucopan with a little butter or dripping mixed into a teaspoonful of flour, pepper and salt, and about i pint of stock. Let them boil for about 15 minutes, then take up anil sprinkle Over them a little chopped parsley. FOR TO-MORROW. Cold mutton, potatoes, mayonnaise, 1 tableBpoonful of thick cream, lettuce, cheese.
