[Specially Written fob The Dominion.] TUESDAY. Fillet of Mutton- ala Charlton. Potatoes. Cabbage. Marmalade Pudding. FILLET OF MUTTC)N A LA CHARLTON. Take a loin of mutton, bono and trim it, and roll it up and tie it with string into tho form of, a gelatine, and placo it in a buttered stewpan; sprinkle over it finely-chopped onion, bayleaf, thy mo, parsley, pepper, and fry quickly with tho pan covered for about 15 minutes; then pour into tho stewpan 2 tablespoonfuls of mushroom catsup, and about halfpint of tomato pulp, and add a little more, if needed, during cooking; let this simmer gently on the side of the stove or in the oven for about 1J hours, tako up and press until cold, then dip into flour, with whole beaten-up raw egg, and then in freshly-made white breadcrumbs, and fny. a pretty golden colour in clean boiling fat for about five minutes; dish up, and Berve with tomato sauce round.
FOE TO-MORROW. 21b. steak, 1J dozon oysters, Jib. suet, 2 freshly-cut small vegetable marrows, 2 lemons.
