TUESDAY. Groqiiettea of' Cold Meat. Potatoes, i Stuffed Tomatoes.. Banana Fritters. " STUFFED TOMATOES; V- ■' Six : tomatoes (all. of one* size), 6 • mushrooms, (chopped fine), 1 onion; 2: ounces of - lean ham (cooked-and ohopped fine), 1 teaspoonful of parsley (chopped), 1 ounce of buttel', a little nutmeg, T tablespoonful of brown sauce, ■ browned breadcrumbs, 1 teaspoonful of Parmesan cheese, pepper and salt, 1 . tablespoonful of bread-, orumbb. Cut ; the centre; from .the tomatoes, and without breaking them, squ'eeze ithe iuice or water out; season eaoh one with a little pepper and salt. Put all the chopped ingredients into a saute pan, and stir over 1 the. fire w.ith the butter until; they-are cooked, but> not burntj'then add the; brown, sauce, the bread-, crumbs, the nutnug, and a little seasoning. Fill eaoh tomato with the mixture; and sprinkle over-each;-a little browned breadcrumbs- in which has. been'mixed the, Parmesan cheese. About; lO.Vminutes: in a moderate, oven.,will suffice to cook them; they should ba quite tender, but not broken. ;' . ■ FOR TO-MORROW. •'Six or 71b. of pickled-"pork, pints of split peas,-carrots, 21b. plums, J dozen eggs, 1 pint of milk; The peas must be soaked overnight.
