Tho system (reports the " Sydney Daily Telegraph ") apparently con-1 sists of two separate pa'rts(l). A sterilising process," (2) the cleaning of. atmosphere in i chambers or rooms. • : j Sterilised by Vapour. "V ! " These are carried out in the following man-1 ■ nor First,'.. material.'is. evaporated by heat and driven by means of fans through ducts into the chambers or rooms wherein the;meat is hung and there'circulated. This' vapour has the effect of destroying ; any' bacteria thatmay be on the " surface :of : tho meat or goods-, so- treated, which necessarily-; 'must. - accumulate while, butchering, and . also from surrounding circumstances. . After , the vapour has been allowed to remain for. at least an hour it is then driven off. . The Atmosphere Filtered. , » -. The: second-stage consists of an. apparatus designed for. the: drying and' purifying of ;-atmosphere. ■ The atmosphere of the chamber or room, containing the produce, is, passed i;'through-two j tanks, the first one .'.containing ' sticks of: chloride - of calcium, which remove the. major portion of the moisture from the atmosphere as it passes : them;; it-is then: passed through into No. 2 tank: in which rotate discs of lead kept moist with sulphuric- • acid/ This latter operation gathers, the remamder of'the.moisture from.the atmosphere; and also removes any- impurities that it may contain. ' -Underthis second-system of drying andcleaning nothing enters,the chamber but .the atmosphere so cleaned and dried.' ; : , Frost Is Superfluous. This-system has -been successfully: applied ■ :in the . carriage of chilled meat - from - the: 'It.'has-enabledbeefto.betrahs- . ported'from nthe; Plate' at a temperature ■ -..wherein:; there - is•'••nor.suspicion,.of: 'frost.> ' Hitherto,: chilled meat'arriving'from the' Argentine lias been discharged in England'in a more or, less, hard. or,'semi-frozen; condition,' . and i frequently iinva l condition -leaving, much to bo desiifed. . 1 Butchers' Like This Meat- ' , ■ The first shipment under, .this, system ar:rived in London in September,'il9o7, by the Guardiana. This consisted of 1059 quarters,, . which reaohed their destination in. first-class condition; . The retail, butcher, has already, found that the': meat,' treated under: this '.sy'sV--■' tem, : keeps longer than, ordiriary. 'chille'd meat,. . . and, further, it has. cut. up .'much better, thereby commanding, higher prices than the . , same ,quality of ordinary chilled'meat. Subsequently to tho arrival of this ship-- ' ment of the- Guardiana , the South American : Improved Chilling Co., Ltd., 'was formed,'for' •the of, working the patents in the Argentine Republio-and- Uruguay,-, and 'Up-to-date shipmonts have-been made from thePlate of 65,000 quarters, or, say, ; 6000 tons. , Several- of the works in: the Argentine Republio are-fitted with the,, system, and' for the : ; marine ; transportation, the;:;;' following jteamers,- Guardiana, Lavßlanca, El •' Argeniino," and Manchester City,. are al«) fitted pith-the necessary plant. Negotiations-are aow' in progress with other companies with »,like object. Can Now Zealand Supply It? -, - -.It is stated that meat under-this proSess -.. 'has 'been sold- at Smithfield. at top prices ■ n after, a period of .65 days from tho date of , .killing, which would, seem to show that the system^can. be,,used:,with success -from such i distant.parts.as Australia and'New;Zealand.'
